Rise of the Drip Cake

At the moment everyone seems to be loving the ‘drip cake’.

Australian cake designer Katherine Sabbath started off this huge cake trend by making these outrageous cakes inspired by the 90s TV programme ‘Goosebumps’.

These cakes are usually topped with chocolates, flowers, meringues, biscuits, macarons, chocolate sails, candyfloss and/or sprinkles and they are always sure to make a statement. Personally, I love the metallic effect on the drip cake. I paint my cakes with Rolkem lustre dusts, they are a South African brand with a really bright metallic range which really makes the drip look extra wow!

I’m not entirely sure why the cakes are such a huge success – maybe it’s because they are so different and out there or maybe it’s the bright colours and unusual toppings, all I know is they are so on trend right now! Most cake designers make drip cakes with a buttercream finish but here at Gabriella Grace Cakes, I tend to use fondant. I just love the finish you get with fondant, the chocolate ganache under layer not only creates a perfectly smooth look but also adds extra flavour and I prefer fondant cakes for transportation. You also can go in so many directions with fondant, I have painted fondant, used lustre to give the cake a pearl finish, added lace, edible sequins, edible gold or silver leaf, pearls, stencilling, the list goes on – I find it so versatile. I also love the colour options – fondant absorbs the colour pastes so much better giving a brighter, more vibrant range of colours.

I am also a huge fan of acrylic cake toppers with this type of cake. The personalised ones can be expensive but they really add the final touch and make a birthday cake extra special. I really love the ones by twentyseven on notonthehighstreet.com they are really well made and the swirly font has a modern, quirky feel. They come in a range of different colours including mirror and glitter options – I’m yet to have a cake order requiring a glitter topper but I’m so keen to do a glitzy design so watch this space!
